1/2 a medium sized lemon
3 inches of ginger root
1/4 cup of pineapple diced
6-7 sprigs of parsley
2 tablespoons of soaked chia seeds
In a glass place the 2 tablespoons of soaked chia seeds. You can soak them in a milk alternative for more flavor. Or you can simply sprinkle in the chia seeds, add a touch of water, and stir it with a spoon until the chia seeds begin to soak up the liquid.
Then with your juicer, juice the cucumbers, half a lemon, ginger, pineapple and parsley. A note about pineapple - since fresh pineapple, especially organic pineapple is hard to come by in January, you can opt for a canned option. Just make sure to look for one that is low in added sugar. Alternatively you could buy a pineapple juice, like Lakewood's which we sell at Aptos Naturals. Pineapple is high in vitamin C, aides in digestion and also serves as an anti inflammatory for our stomachs. It's a fruit loaded with health benefits, but you can also choose not to add it to your juice, and thus lower the sugar content. Okay, enough about pineapple!
Simply pour the contents of your juice into your glass with chia seeds, and enjoy!
