1 1/4 cup almond meal
1 cup flour (to make these cookies gluten free, use an oat flour)
1/2 cup coconut sugar (or maple sugar)
1 tsp ground ginger
2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
1 tsp baking soda
a pinch of salt
1/2 cup of molasses
2 tsp of coconut oil (or 2 eggs for a more traditional recipe)
Preheat your oven to 350 degrees Fahrenheit. In one bowl mix the spices, almond meal, flour and baking soda. In a separate bowl mix together the sugar, molasses vanilla and coconut oil. Slowly add the wet ingredients to the dry. Once the dough is mixed together let it sit in your refrigerator for about 20 minutes. Then take it our, with a rolling pin roll the dough out to moderate thickness, and then use cookie cutters to make desired cookie shapes. Cook in oven for 10-12 minutes and then let cool.
Cookies will last up to 3 days.
