Vegan Banana Bread


INGREDIENTS

3 ripe bananas

1/4 cup coconut oil

1/4 cup milk or water (almond milk seems to work the best if you are using a milk alternative)

1/4 cup maple syrup

1 tsp vanilla

1/2 cup sugar (for an alternative to traditional cane sugar try coconut sugar)

1/2 cup flour

1 teaspoon baking soda

1/4 teaspoon salt

1/3 teaspoon of cinnamon

DIRECTIONS

Preheat the oven to 350 degrees Fahrenheit.

In one large bowl mash up the ripe bananas and mix in the coconut oil, milk or water, maple syrup, vanilla and sugar.

In a separate bowl add the flour, baking soda, salt and cinnamon. Then combine dry ingredients with the wet, and stir it well. Pour into a bread pan that has been greased, I use coconut oil but you can use the oil of your preference. Bake in the oven for 35 to 40 minutes. The bread is done when you stick a knife in it and it comes out clean. Serve warm with butter or a butter alternative, and enjoy!

Also, the bananas can easily be replaced with zucchini to make delicious zucchini bread. Use 3/4 cup zucchini that has been squeezed to remove the water. If you'd like to try pumpkin use 1 cup of pumpkin preserve (or baked sugar pie pumpkin you want to make it all yourself) or 2 tablespoons of apple sauce if you want an apple bread.
